Description
The Lombetto o Lonzino is a type of cured meat obtained by processing the lumbar and dorsal muscle of the pig, taken from the sixth vertebra forward. This delicious cured meat, completely devoid of fat, is part of Lazio's gastronomic tradition. It is distinguished by its almost total absence of fat and by the colour that tends to darken as the lean parts mature.
The lombet is particularly appreciated in pork butchery due to its delicate flavour, which makes it a refined choice compared to capocollo, thanks to the prized part of the pig from which it comes. The production process includes salting and flavouring, followed by a drying period of several days.
Afterwards, the loins are carefully wrapped and tied, strictly by hand, and then left to mature for about 30 days. The result is an exquisite sausage with a delicate, fragrant flavour, ideal for those who want a fat-free product but don't want to compromise on taste.
